Thanksgiving morning at the Moore County fox hunt often begins with decadent brunch fare like mimosas and Scotch eggs. White tablecloths are not required - tailgating can be as fancy or no-frills as you like. Mike and Irene Russell hold a catered post- hunt breakfast at their farm for more than 200 invited guests.

Irene's Pork Sausage Balls

  • 1 pound hot or spicy bulk pork sausage, uncooked
  • 8 ounces shredded cheddar cheese
  • 2 cups Bisquick mix

Preheat oven to 400 degrees. Combine all the ingredients in a bowl and mix into a dough.

Form into balls about an inch in diameter and place on a baking sheet.

Bake until golden brown, about 10 minutes. Serve hot immediately, or freeze until ready to use.

Makes 5 dozen sausage balls.
